What are the black and double black diamond "typically" like at Canaan and Timberline? Do they groom them (daily)? Are there bumps, are they typically icey? Are they steep (relatively) for the area or narrow? Specifically, I was looking at the trail maps online and wonding about Gravity at Canaan Resort and the Drop and Off the Wall at Timberline. I am just trying to get an idea of what is typical. Obviously conditions can change. Any input would be appreciated.

You correctly mentioned the three steepest slopes at those ski areas. They can range from totally smooth to very bumpy. You need someone who's made a recent visit to provide current status. Generally, Gravity is probably the least likely to have serious bumps. Sometimes The Drop and OTW can feature enormous whales of manmade snow running down the slope like the tail of a giant Stegosaurus, they can also have regular type moguls on the upper/steepest sections. Sometimes Timberline grooms one and leaves the other ungroomed and bumpy.

Off the Wall was groomed (or something like that) sometime in the past few days. It was hit pretty hard by the wind but still had some soft snow on it.

The Drop has whales down the center and the right side has very soft bumps. Very nice today!

For Timberline, the tree skiing is the truly advanced stuff.
